Ingredients

  • 180 grams Pureed Pumpkin
    High in Vitamin A, C and Potassium.

    1 Banana (ripe, mashed)
    High in Potassium

    40mL Canned Coconut Milk
    Optional: Switch to a dairy product or soya milk.

    20g Blueberries
    High in antioxidants and polyphenols.

    5g Maple Syrup
    10g Unsweetened Shredded Coconut (plus extra for topping)

  • Tsp Cinnamon

Directions

  • In a medium pot, stir together pureed pumpkin, banana, coconut milk, shredded coconut, and cinnamon. Cook on medium heat for five minutes, until cooked through and thickened.
  • Serve in a bowl and top with blueberries, maple syrup, and shredded coconut. Enjoy!

Notes

  • A real different and interesting breakfast to try - if you're looking for a dish high in potassium, vitamin A and C then this may be the breakfast for you. You also have the added polyphenols from the blueberries to decrease muscle damage and soreness.
