Ingredients

  • 2 slices Rye Bread (toasted)
    There's nothing wrong with sourdough or wholemeal bread but Rye and Hummus go really together!.

    1 Garlic (clove, peeled)
    Full of antioxidants which is great for reducing cholesterol and blood pressure.

    60g Hummus
    Naturally rich in protein and fibre which great for muscle development and gut health.

    75g Cherry Tomatoes (halved)
    Naturally high in vitamin C, potassium and folate.

    45g Pitted Kalamata Olives (halved)
    Rich in antioxidants supporting cardiovascular and bone health.

    Sprinkle herbs and salrt to taste:
    Chili Flakes
    Oregano
    Ground Sumac
    Fresh Dill (chopped)
    Sea Salt (flaky)

Directions

  • To assemble, place the bread on plates and top evenly with the hummus, tomatoes, olives, oregano, chili flakes, sumac, sea salt, and dill. Enjoy! - It's that simple

Notes

  • A really light summer lunch and so easy to make - it takes minutes. It got a good balance of protein, carbohydrates and fats. You can also add cucumber if feel like it needs something extra - plus using a flavoured hummus which means you don't need the spices or salt so even easier. One step further, you can blend some chickpeas with spices to make your hummus.
