Ingredients


  • 2 Eggs
    High in protein and healthy fats.

  • 20g Feta Cheese (crumbled)

  • High in calcium and lower in fat (compared other cheeses).


  • 1/2 White Onion (chopped)
    Rich in antioxidants and has anti-inflammatory.

    180g Swiss Chard (chopped)
    4g Coriander (chopped, plus extra for garnish
    Leafy greens rich in nutrients and high in iron.

    1 gram Chili Flakes

  • Tsp Extra Virgin Olive Oil

  • Tsp Sea Salt

Directions

  • Heat the olive oil in a medium pan over medium heat. Sauté the onion for five minutes until translucent.
  • Make small wells for eggs in the middle of the pan. Crack eggs into the pan and season with the remaining salt.
  • Cover the pan with a lid and cook for five to six minutes or until the eggs are cooked to your liking.
    Remove the pan from the heat. Garnish with feta cheese and extra chopped cilantro. Enjoy.

Notes

  • A really wholesome dish full of protein and leafy greens to boost energy.- This this is a great breakfast before a tough workout or to aid in recovery. The protein will help repair muscle and the leafy greens will reduce muscle damage enhancing your recovery from a tough session. You can also serve with lightly butter sourdough bread.
